Holiday Creamy Vegan Mushroom Soup

Warm up your holiday season with a homemade creamy mushroom soup. This vegan take on a classic creamy mushroom soup recipe is a healthy alternative to keep you warm and healthy.

Ingredients: 

3 cups white mushrooms
1 cup shitake mushrooms
1 cup crimini mushrooms
1/2 yellow onion
2 cloves garlic
2 sprigs fresh rosemary
1 cup coconut cream
2 tbsp olive oil
6 cups veggie broth
salt & pepper to taste
optional: truffle oil

Start by mincing your garlic and onions. Over medium heat, sauté your onions and garlic in olive oil in a medium pot. Chop all the mushrooms into small cubes. Add salt and pepper. Once your onions are sweating, add mushrooms and saute until they start to brown. Add coconut cream and rosemary then slowly add 6 cups of broth. Let simmer for 30 minutes on low, stirring occasionally. Season to taste. 

Add soup to a high powered blender or blend in the pot and blend until creamy. Drizzle truffle oil and/or add a sprig of rosemary to garnish. Enjoy!
