Homemade Holiday Hummus

The holiday season can bring love, cheer, and merrymaking, but with that, the stress of frantic, last minute holiday preparations. I found myself in one of those frantic moments yesterday as I got caught in traffic and was extremely late for a holiday gift exchange. I had made grand plans to go the grocery store and make a beautiful holiday appetizer, but had to think on my toes if I was going to make it at all. I went through my kitchen and was able to rustle up: 

1 can of organic garbanzo beans
your favorite olive oil
sea salt & pepper
2 cloves of garlic
1 jar of pitted kalamata olives
1/2 jar of artichoke hearts
1 avocado
Squeeze of lemon juice

I use a Vitamix but you can use any blender or food processor. Here are the directions: 

1. Place ingredients in blender
2. Blend
3. Scoop out of blender and enjoy!

Hummus is really the easiest, quickest appetizer to make. You can put any spin on it: sun dried tomatoes, roasted bell peppers, etc. I literally found things in my fridge and added them to the mix. Your friends and family will appreciate that it's homemade and fresh. Serve with your favorite vegetables or pita chips!
